Eggplants are low in calories but high in the fiber department. The origin of the eggplant is in India, and the Dar al Islam spread the plant to China and as far away as medieval Spain.
The eggplant is actually a classified as a fruit and more specifically a berry. From its early days in India, the modern eggplant has a new home in the United States as the state of New Jersey produces 2/3 of the world's total eggplant count.
