More Information  

Depending on either the salt content or the temperature of the water, oysters change their sex. This is most likely done in order to balance out the ratio of male to female oysters from season to season. A cloud of eggs are released during reproduction and these eggs float about for some time. After this they attach themselves to something and form a protective shell.
Recently, new research into to oyster reproduction may determine that there are also some oysters that cannot change sex. This information may alter some of the previously believed evolutionary sexual traits.
